Creamy Strawberry Parfaits

Ingredients

16 ounces cream cheese

1 cup Daisy Brand Sour Cream

1 1/2 cups powdered sugar

1 teaspoon vanilla

8 ounces frozen whipped topping

4 cups strawberries

1/4 ounce envelope unflavored gelatin

1/3 cup cold water

2 tablespoons sugar
Directions
Beat together the cream cheese, sour cream, powdered sugar and vanilla until well blended in a large bowl. Stir in the thawed whipped topping. Puree 1/2 of the strawberries into a smooth sauce and set aside. In a small saucepan, sprinkle the gelatin over the cold water. Let the mixture stand for 1 minute. Heat the mixture over low until the gelatin is dissolved. Add the pureed strawberries, stirring to blend. Fold the strawberry mixture into the sour cream mixture. Pour into a 2 quart bowl and refrigerate until firm, at least 4 hours. Slice the remaining strawberries, reserving 8 whole berries, and sprinkle with sugar. Place a large spoonful of sour cream mixture into 8 parfait glasses. Place a large spoonful of strawberries on top, and then repeat. Top each with a whole strawberry. Refrigerate until serving.
