Creamy Strawberry Parfaits

Ingredients

16 ounces cream cheese

1 cup Daisy Brand Sour Cream

1 1/2 cups powdered sugar

1 teaspoon vanilla

8 ounces frozen whipped topping

4 cups strawberries

1/4 ounce envelope unflavored gelatin

1/3 cup cold water

2 tablespoons sugar
Directions
Beat together cream cheese, sour cream, powdered sugar and vanilla until well blended. Stir in thawed whipped topping. Puree 1/2 of the strawberries into a smooth sauce. Set aside. In a small saucepan, sprinkle gelatin over cold water. Let mixture stand about 1 minute. Heat over low until gelatin is dissolved. Add the pureed strawberries, stirring to blend. Fold strawberry mixture into sour cream mixture. Pour into a 2 quart bowl and refrigerate until firm, at least 4 hours. Slice remaining strawberries, and sprinkle with sugar. Place a large spoonful of sour cream mixture into 6 parfait glasses. Place a large spoonful of strawberries on top, and then repeat. Top with a whole strawberry. Refrigerate until serving.
