Ingredients

  • 2 eggs
  • 1 cup cold water
  • 1 cup flour
  • 3/4 teaspoon salt
  • 1/2 cup Daisy Brand 4% Cottage Cheese
  • 1/2 cup Daisy Brand Sour Cream
  • 1/2 cup shredded cheese (Sharp Cheddar, Monterey Jack, Pepper Jack, Mozzarella, etc)
  • 2 tablespoons softened butter

Directions

Batter: Beat 1 egg until light in mixing bowl. Add water, flour, and salt. Beat batter until smooth. Thoroughly spray 6 inch skillet with non-stick cooking spray and pour in 1-1 1/2 tablespoon of batter into pan. Tilt and shake pan until batter is spread evenly. Fry one side only over medium heat until pancake looks dry and edges slightly curl. Flip onto cloth, cooked side up. Let stand until cool. Re-spray pan with cooking spray as needed to prevent sticking. Filling: Drain excess moisture from cottage cheese in cheesecloth or net colander. In a medium-size mixing bowl, beat egg until light. Add cheese and sour cream; mix thoroughly. Onto cooked side of each pancake, place 2-3 tablespoons of filling batter. Fold both sides in toward middle and roll up. Fry all sides in butter and serve immediately. Add a dollop of Daisy to garnish.
