Ingredients

  • 6 small baking potatoes
  • 2 tablespoons butter, melted
  • 2 teaspoons seasoned salt
  • 3 tablespoons grated Parmesan cheese
  • 1 1/2 cups shredded cheddar cheese
  • 4 strips bacon, cooked and crumbled
  • 3/4 cup Daisy Sour Cream
  • 2 teaspoons finely diced fresh chives

Directions

Lightly grease the outside of potatoes, cut small slit in the top and bake at 425 degrees for 45 minute or until soft. Let stand until cool enough to handle (about 15 minutes). Cut the potatoes in half lengthwise and scoop out the cooked potato, leaving a very thin layer of potato. (Save the cooked potato for mashed potatoes or hash browns.) Brush the outside and inside of skins with melted butter. Sprinkle the inside with seasoned salt and Parmesan cheese. Place on a lightly greased baking sheet. Bake for 8 minutes or until crisp and bubbly. Fill each with Cheddar cheese and bacon. Bake 3 minutes or until the cheese is melted. Top with a dollop of sour cream and sprinkle of chives. Variation: Twice Baked Potato Fingers Bake 3 large (about 5-inch) potatoes for 1 hour; cool. Cut in half lengthwise, and then lengthwise in half again, making 12 long fingers. These were so quick and easy to make. I am embarrassed that I ever bought them pre-made from the grocery store. The parmesan cheese was an awesome addition. I didn't have any chives so I sprinkled them with onion onion seasoning instead.

Made these for dinner the other night and my family couldn't get enough. The daisy sour cream we received free to try is now a must have in our house! Everything just tastes better with sour cream. My 3 year old begs for more. Thanks Daisy!

I made these potato skins for dinner and my family couldn't get enough! The Daisy Sour Cream was the perfect finishing touch! The squeeze pouch made it so easy to add a dollop of Daisy!!!

Definitely making these again for Super Bowl Sunday husband and guests enjoyed them. Daddy's sour cream is by far the best tasting out of all the brands!!!

I love these potatoes. They are very yummy. I did a test run as I wanted to try them for Super Bowl 50. They will be prepared in my kitchen at least two times per month, if not more often.

We use Daisy sour cream only its the best tasting and its the best I've ever have used not only good on lot skins but also good on Taco salads very flavorful we use it all the time
