Ingredients

  • 1/2 English cucumber, cubed
  • 2 medium tomatoes, chopped
  • 1/2 cup black olives
  • 1/4 cup red bell pepper, cut into bite-sized pieces
  • 2 tablespoons diced red onion
  • 4 cups Romaine lettuce
  • 1/2 cup Greek vinaigrette salad dressing
  • 2 cups Daisy Brand Cottage Cheese

Directions

In large bowl, combine the cucumber, tomatoes, olives, bell pepper, red onion, and romaine. Add vinaigrette; toss. Divide evenly on 4 salad plates. Top with cottage cheese. Serve with pita chips, if desired.
