New Potato Salad

Ingredients

  • 4 pounds red new potatoes
  • 4 chopped green onions
  • 1/2 cup fresh dill
  • 1/2 cup white wine vinegar
  • 2 tablespoons Dijon-style mustard
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil
  • 3/4 cup Daisy Brand Light Sour Cream

Directions

Wash potatoes and cook in boiling water just until tender. Chop green onions and dill. Drain potatoes in colander and run cold water over them. Cut potatoes into quarters as soon as they can be handled. Place in a large mixing bowl. To prepare dressing: place white wine vinegar, Dijon mustard, salt, and pepper in a blender of a food processor and blend until combined (about 5 seconds). With motor running, pour the oil in a slow, steady stream until incorporated. Pour dressing over potatoes, add onion-dill mixture and toss gently. Fold in sour cream. Let stand 30 min before serving.
