Cottage Cheese Broccoli Cornbread

Ingredients

  • 1 cup all purpose flour
  • 1 cup yellow cornmeal
  • 2 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup Daisy Brand Sour Cream
  • 1/2 cup Daisy Brand Cottage Cheese
  • 1 egg, beaten
  • 1/4 cup vegetable oil
  • 1 cup frozen broccoli cuts, thawed and patted dry
  • 2 tablespoons minced onion

Directions

Mix flour, cornmeal, sugar, baking powder and salt in a large bowl. Make a well in the middle of the dry ingredients. Add the sour cream, cottage cheese, beaten egg, and vegetable oil. Stir to incorporate ingredients. Fold thawed chopped broccoli and minced onion into mixture. Bake in an 8 or 9-inch square pan sprayed with nonstick spray in a 375 degree oven for 30 to 35 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes.
