Dill Cottage Cheese with Salmon Brochette

1 8 ounce fresh salmon filet

1 cup Daisy Brand 2% Cottage Cheese

2 tablespoons Daisy Brand Sour Cream

1/4 teaspoon minced fresh dill

1 1/2 teaspoons lemon juice

4 Cherry tomatoes

1 dash salt and pepper to taste
Directions
Cut salmon filet into 2 inch by 2 inch cubes. Soak two 7 inch wooden bamboo skewers in warm water to help prevent from burning while preparing the rest of the meal. Pre-heat grill to medium-high heat. In a small bowl combine cottage cheese, sour cream, minced dill and fresh squeezed lemon juice; stir to blend evenly. Divide cottage cheese mixture between two plates. Remove skewer from water and place the first cherry tomato on it and move to the far end of the skewer, next place the first piece of salmon on the skewer. Press the tomato and salmon tightly against each other and repeat for the remaining cherry tomato and salmon piece. This will take up most of the skewer leaving just a small amount of skewer showing at each end.
Lightly spray the grill with non-stick cooking spray. Season the salmon brochette with salt and pepper and also lightly spray with non-stick spray. Place on grill and cook for 3 minutes a side for medium salmon (add another minute per side for medium well). Remove salmon from grill and plate alongside the cottage cheese/sour cream dill mixture.
