Ingredients

  • 1/2 pound fresh green beans
  • 1 bell pepper
  • 2 medium tomatoes
  • 4 cups Romaine lettuce
  • 4 cups fresh spinach
  • 1/4 cup black olives
  • 2 cups Daisy Brand Cottage Cheese

Directions

Blanch the green beans, drain, and rinse. Slice the bell pepper into long thin strips. Slice the tomatoes. Combine the lettuce, spinach, tomatoes, bell pepper, olives, and green beans. Portion the salad onto 4 plates and top each with 1/2 cup of cottage cheese. *Optional - For a moister salad try adding 4 tablespoons of vinaigrette.
