Ingredients

  • 1/3 cup cubed cucumber
  • 1/3 cup cubed tomatoes
  • 1/3 cup cubed bell pepper
  • 1/4 cup olives
  • 1/4 cup corn kernels
  • 1 can artichoke hearts, drained and chopped
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 dash black pepper

Directions

Mix all ingredients together. Chill before serving, if desired.
