Ingredients

  • 1 package taco seasoning
  • 31 ounces refried beans
  • 1/4 cup green onions, sliced
  • 1/2 cup Daisy Brand Cottage Cheese
  • 2 avocados
  • 1 teaspoon lemon juice
  • 1 teaspoon lime juice
  • 1/2 cup Roma tomatoes, diced
  • 1 teaspoon garlic, minced and sautéed
  • 1 cup salsa
  • 2 cups Daisy Brand Sour Cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup black olives, sliced

Directions

Mix the taco seasoning and the refried beans until well combined. Wash the green onions thoroughly, slice thinly, and set aside. Blend the cottage cheese until slightly lumpy. Mash the cottage cheese together with the avocados, lemon and lime juices, Roma tomatoes and garlic until mixed. Layer the ingredients as follows in an 8x8x2-inch pan: bean mixture, avocado mixture, salsa, sour cream, shredded Cheddar cheese, green onions and olives. Refrigerate until ready to serve.
