6 boneless skinless chicken breasts

1 cup Daisy Brand Sour Cream

1/4 cup shredded cheddar cheese

1 shallot, chopped

1/8 cup chopped parsley

1/8 cup chopped chives

1/4 cup slivered almonds

2 teaspoons salt

2 teaspoons pepper

1/4 cup grated Parmesan cheese

6 tablespoons butter

1 cup flour

6 eggs, beaten

1 1/2 cup seasoned bread crumbs
Directions
Pound the chicken breast between waxed paper to 1/3-inch thickness, set aside. Mix the sour cream, shredded Cheddar cheese, shallot, parsley, chives, almonds, salt, pepper and Parmesan cheese together in a small bowl. Place a spoonful of the mixture on each chicken breast with a tablespoon of butter. Roll the chicken up and lightly cover in flour. Dip the chicken in the beaten eggs, and then roll in the breadcrumbs. Spray a casserole dish with nonstick spray. Place the chicken in the dish and spray the top of the chicken with nonstick spray. Bake at 350 degrees for 30-45 minutes, covering if chicken begins to over-brown.
